LEE ANN'S FAVORITE CARAMEL
WALNUT BARS
 
2 c. unsifted flour
3/4 c. firmly packed light brown sugar
1 egg, beaten
3/4 c. cold butter
3/4 c. shelled walnuts, chopped
24 caramels, unwrapped
1 (14 oz.) can sweetened condensed milk (not evaporated milk)

Preheat oven to 350 degrees. In large bowl, combine flour, sugar and egg; cut in 1/2 cup butter until crumbly. Stir in walnuts. Reserving 2 cups crumb mixture, press remainder firmly on bottom of greased 13 x 9 inch baking pan. Bake 15 minutes. Meanwhile, in heavy saucepan, over low heat, melt caramels with sweetened condensed milk and remaining 1/4 cup butter. Pour over prepared crust. Top with reserved crumb mixture. Bake 20 minutes or until bubbly. Cool; cut into bars. Store loosely covered at room temperature.

Ive been making these every Christmas for years and they are absolutely devine. I did create a shortcut with the caramel. Take 1 can of condensed milk, remove label and completely submerge in water. Boil for about 3 hours, remove and let cool completey before opening (I usually do this the day before I bake). The evaporated milk turns into caramel !!!. This cuts so much time rather than opening all those caramels.
