COCONUT FALOODA 
1-1/2 tsp. agar-agar (falooda) powder
2-1/2 cups water
10-12 tbsp. sugar
1/8 tsp. salt
1 can (13.5 oz.) coconut milk

Combine agar-agar, salt, and sugar in water and boil over medium heat for 15 minutes. Add coconut milk and mix well using wire whisk. Simmer for 10 more minutes. Pour mixture into 1-1/2 qt. glass dish. Let it cool on countertop until completely set. Do not move dish around during this time.

Cover lid and refrigerate 2-4 hours. Cut into squares before serving. Carefully lift up each square; 2 beautiful layers will have formed: the opaque water layer on the bottom and the white coconut layer on top.
