NANA'S GARDEN SPECIAL | |
2 to 3 tbsp. vegetable oil (1 tbsp. bacon grease substituted for 1 tbsp. oil or crumbled bacon adds flavor) 1 c. chopped carrots 1 lg. zucchini or several small ones 1/2 lg. onion or 1 sm. onion, or to taste Dash of garlic powder 1 can stewed tomatoes 3 to 4 fresh tomatoes, peeled Water Salt to taste if desired 3/4 c. Uncle Bens converted rice 1/8 tsp. Tabasco or other hot sauce or to taste 1/8 tsp. black pepper Heat oil(s) in Dutch oven. Stir fry carrots 1 to 2 minutes; add zucchini and onion, stir fry until onion translucent. Add all of tomatoes; smash with spoon while stirring until heated through. Add water to cover vegetables plus approximately 1 inch extra. Add salt, pepper, rice, garlic powder, hot sauce. Bring to boil. Cover, decrease heat. Simmer 20 minutes, stirring every 5 minutes or so. May substitute fresh tomatoes, onion, green pepper to taste. Green pepper should be added with carrots. Makes 8 to 10 servings. |
