MARINATED CAULIFLOWER SALAD 
1 med. cauliflower
4 carrots, shredded
1/2 c. bottled Italian salad dressing
1/2 c. sliced black olives
1 pimento, diced

Break cauliflower into flowerets and blanch until just crisp tender. Drain and slice into bite size pieces. Add shredded carrots, and salad dressing and let marinate for about 2 hours. Before serving, toss with the black olives and pimento.
