PORTUGUESE POTATOES 
6-8 med. potatoes
1 lb. Velveeta cheese, diced
1/2 c. diced onion
1 (2 oz.) jar pimento
1 tsp. garlic salt
1 tsp. paprika
2 tbsp. parsley flakes
3 slices bread, cubed
1 1/2 to 2 sticks butter, melted

Cook potatoes in peel for 20-30 minutes until tender, cool, peel, dice. Arrange in lightly greased 9x13 inch pan. Sprinkle onions, pimentos and cheese over potatoes. Add combined dry ingredients by sprinkling over the top of potato and cheese mixture. Layer bread crumbs over top and pour melted butter over all. Bake at 350 degrees for 20-30 minutes until browned. 4-6 servings.
