BACON QUICHE 
CRUST:

1 stick butter
3 tbsp. vegetable shortening
2 c. all purpose flour
1/2 tsp. salt, optional
5 to 6 tbsp. cold water

FILLING:

3/4 c. half and half
4 eggs, large
1 sm. carton egg substitute equivalent to 4 eggs
8 slices bacon, crisp
1 tbsp. onion powder
2 c. shredded cheese (Amish Swiss)
1 c. broccoli, finely chopped, optional

To Make Crust: Put flour in large bowl. Cut in squares of butter. Add vegetable shortening and salt. Work these ingredients well. Add water 1 tablespoon at a time, until easy to roll. Press in deep dish pie pan or quiche pan. Set aside.

FILLING: Beat eggs and egg substitute well. Add all other ingredients. Pour into crust and bake in 375 degree preheated oven for 30 minutes, or until done. Quiche is done when knife inserted in the middle comes out clean. If top of quiche browns too quickly, cover lightly with foil square until done. Eat at room temperature.
