CHICKEN RICE PILAF 
1/2 c. converted rice, uncooked
1 c. chicken, raw, 1" chunks
1 c. chicken broth
1 1/2 tsp. canola oil
1/4 tsp. white pepper
1 tsp. rosemary, crushed
1 tsp. garlic powder
1/2 c. green onions
1/2 c. carrots, diced
1 c. broccoli florets

Place chicken and oil in skillet; stir fry (medium-high) until chicken is partially cooked. Add uncooked rice; brown slightly. Lower heat; add broth and remaining ingredients. Cover pan and simmer for approximately 20-25 minutes or until all moisture is gone from the bottom of pan and chicken and rice are tender. Serves 4. This is especially tasty for salt, oil and diabetic restricted diets.
