ZUCCHINI BREAD | |
3 eggs 2 c. sugar 1 c. oil 1 tsp. walnut extract 1 tsp. baking soda 1/2 tsp. baking powder 1 c. mixed nuts 1/8 tsp. cinnamon 3 c. sifted flour 2 c. grated raw zucchini 1 tsp. vanilla Beat eggs until foamy, then slowly, beat in sugar, oil, and vanilla. Combine cinnamon, baking soda, baking powder, salt, flour, sift these ingredients together, 2 or 3 times to blend thoroughly. Stir grated zucchini into the flour mixture, then fold into egg mixture. Blend well, then fold in nuts. Pour the batter into a loaf pan. Grease pan. Bake at 350 degrees for 1 hour or until bread tests done. Let get cold before cutting. |
