BAKED CATFISH 
4 med. size catfish
1 lg. onion, sliced
2 tsp. garlic salt
3 tbsp. bacon drippings
2 tsp. black pepper
4 tbsp. flour
2 tbsp. parsley flakes

Place prepared fish in a baking pan. Add bacon drippings, parsley, pepper and salt. Cover with sliced onions and sprinkle flour over mixture. Add 1/2 cup water. Bake in a preheated oven at 350 degrees until well done.
