ENCHILADA PIE 
1 lb. ground beef
1 onion, chopped
1 tsp. pepper
1 tbsp. chili powder
1 (8 oz.) can tomato sauce
1 1/2 c. shredded cheese
1/2 c. water
Nacho cheese chips

Brown beef and onion. Add salt, pepper, chili (or ancho-spice) powder, and tomato sauce. Butter the bottom of a 2-quart casserole. Alternate layers of meat sauce and corn chips, then cheese (Velveeta and/or Colby). Add water; cover and bake at 400 degrees for 20 minutes. Yield: 4-6 servings.
