POTATO MESS 
6 to 8 good size potatoes
16 oz. sour cream
1 1/2 sticks butter
Small onion, chopped real fine
Salt and pepper to taste
Milk to make creamy
8 oz. grated Cheddar cheese

Boil potatoes until real tender, blend them with mixer until real creamy, add salt and pepper and butter; mix well. Then add sour cream, mix well. Stir in onion and add enough milk to make creamy but not soupy. Pour into casserole dish top with grated cheese. Bake in preheated oven at 450 degrees until cheese is melted thoroughly.
