1 (4 serving size) box instant pistachio pudding mix
2 c. Cool Whip
8 1/2 can crushed pineapple, well drained

Beat first 2 ingredients in a mixing bowl until smooth. Drain the pineapple from the liquid; then place onto a paper plate to drain well. Then add to the first 2 mixed ingredients by folding in. Place in serving dishes or dish. Chill for a few hours.

NOTE: Can add some chopped pecans or 1/2 cup mini marshmallows or coconut to taste.
