MANDARIN CHOCOLATE PIE 
1 1/2 c. plus 1 tbsp. cold skim milk
1 large box chocolate sugar-free instant pudding
1 reduced-fat graham cracker crust
4 oz. fat-free cream cheese, softened
1 tbsp. concentrated orange juice
1 packet Equal
4 oz. Cool Whip Lite, completely thawed
cocoa powder with 1 packet Equal
Mandarin oranges, drained (for garnish)

Pour 1 1/2 cups milk into medium bowl. Add pudding mix and whisk until blended. While still thin, pour into pie crust. Spread evenly. This will thicken quickly.

In a large mixing bowl, add softened cream cheese and orange juice concentrate. Whip until smooth at low speed, about 2 minutes. Add Equal and whip for 1 minute more. Fold in thawed Cool Whip. Sprinkle pie with combined cocoa powder and Equal. Chill overnight. Cut each pie into 8 servings. Garnish with Mandarin oranges.
