QUICK VEGETABLE SOUP | |
1 lb. ground beef 1/4 c. chopped onion 2 tbsp. butter 1 (10 oz.) pkg. frozen mixed vegetables 1 c. chopped celery with tops 2 c. tomato juice 2 c. water 2 beef bouillon cubes 1 tsp. salt 1/8 tsp. pepper In 3-quart saucepan, brown meat and onion in butter, over medium flame. Drain off excess fat. Add remaining ingredients and simmer for 15 to 20 minutes over low flame. Stir occasionally. Serve as needed and freeze remainder in meal- size amounts for future use. Makes 1 1/2 quarts. |
