CARROT CAKE 
2 c. flour
2 c. sugar
1 tsp. salt
2 tsp. baking soda
2 tsp. cinnamon
1 1/2 c. cooking oil
4 eggs (beat into batter one at a time)
3 c. finely grated carrots

Mix dry ingredients, add eggs and oil. Stir in grated carrots. For layer cake, baking 3 layer pans for 30 minutes at 350 degrees. If you prefer, may be baked in 13 x 9 1/2 inch cake pan at 350 degrees for 35 to 40 minutes until tested done.

ICING:

1 (8 oz.) pkg. cream cheese
1/2 to 1 stick butter
1 box powdered sugar
1 to 2 tsp. vanilla
Chopped nuts (optional)
