CHERRY CHEESE TARTS 
3/4 c. cookie crumbs
8 oz. pkg. cream cheese
1/3 c. sugar
1 tsp. lemon juice
1 tsp. vanilla
1 egg
20 oz. can cherry pie filling

Preheat oven to 375 degrees. Line muffin pan with paper muffin cups. Put 1 tablespoon cookie crumbs in each cup. Put cream cheese, sugar, lemon juice and vanilla into large mixing bowl. Mix at medium speed 3 minutes. Add egg and continue beating another 2 minutes. Put 2 tablespoons of the cheese mixture into each of the muffin cups, over cookie crumbs. Bake 15 minutes. Let cool 1 hour. Remove paper cups from pan.

Put 2 tablespoons cherry pie filling over cup. Serve immediately or refrigerate for serving later. Makes 12 tarts.
