CHEESY NEW POTATOES | |
12 med. size new potatoes, unpeeled, cut in cubes 1/2 c. butter, melted 1/4 tsp. pepper 1 c. fully cooked real bacon pieces 2 c. (8 oz.) sharp American cheese 1/4 c. chopped frozen parsley Cover potatoes with salted water and bring to boil; reduce heat and cook for about 15 minutes or until tender. Drain potatoes and cool slightly. Stir in butter and pepper, toss lightly. Spoon 1/2 of potato mixture into a lightly greased 3 quart casserole. Top with each bacon and cheese. Repeat layers. Bake at 350 degrees for 20 minutes or until bubbly. Garnish with parsley. Yield: 8 to 10 servings. |
