LEMON PARFAIT PIE 
1 pkg. lemon Jell-O
1 1/4 c. hot water
1 tsp. grated lemon rind
3 tbsp. lemon juice
1 pt. vanilla ice cream
1 baked 8" pie shell, cooked

Dissolve Jell-O in hot water in 2 quart saucepan. Add lemon rind and juice. Add ice cream by spoonfuls, stirring until melted. Chill until thickened, but not set (25-30 minutes). Add to cooked pie shell. Garnish with whipped cream and additional lemon rind, if desired.
