APPLE - BRAN MUFFINS 
2 c. sugar
4 c. flour
4 tsp. baking soda
4 tsp. cinnamon
1/2 c. bran
1 c. coconut
2 apples, grated or sliced thin
1/2 c. raisins
1 c. chopped pecans
4 eggs
1 tsp. vanilla
2 c. olive or vegetable oil

Sift dry ingredients. Add fruit and nuts; stir well. Add eggs, oil and vanilla. Stir only until combined. Spoon into cupcake tins. Bake at 375 degrees for 20 minutes. Let stand 24 hours for flavor.
