APPLE COFFEE CAKE 
2 c. unsifted flour
1 1/2 c. sugar
2 tsp. cinnamon
2 tsp. baking soda
1 tsp. salt
1/2 c. oil
2 eggs (beaten)
1/4 c. brewed coffee
1 1/2 tsp. vanilla
1 c. chopped nuts
2 1/2 c. chopped or sliced, peeled apples

Mix dry ingredients in a large bowl. Stir in wet ingredients and blend. Stir in apples and nuts. Pour into a greased, floured 9 inch tube pan. Bake at 350 degrees for 60 minutes or until done when tested with a cake tester. Remove, cool 10 minutes. Can be served warm or cool, sprinkled with confectionery sugar.
