WHITE BEAN SALAD 
1 can (20 oz.) white kidney beans, rinsed and drained
1/4 c. minced parsley
1 lg. clove garlic, minced
3 tbsp. olive or vegetable oil
2 tbsp. lemon juice or white wine vinegar
Optional: Salt, pepper to taste

Put all ingredients in a bowl; toss lightly to mix. Cover and chill well. Makes 4 servings.
