BETTY LITTLE'S RICE CASSEROLE | |
1 c. uncooked rice 1 stick butter 2 cans beef or chicken consomme 3 tbsp. parsley (dry) 3/4 c. celery, finely chopped 3/4 c. onions, finely chopped 3/4 c. shredded carrots 1 sm. pkg. slivered almonds Brown rice in melted butter over medium heat. Add consomme and cook slowly, about 30 minutes, covered until done. Add vegetables and almonds. Place all into a 2 quart casserole. Cover and bake at 350 degrees for 30 minutes. If you want to do a day ahead, keep cooked rice separate from vegetables and almonds until ready to bake, then add all together. Bake for 45 minutes, covered. |
