NORWEGIAN PANCAKES 
2 eggs
1 tsp. sugar
1/4 tsp. baking powder
3/4 tsp. flour
1/2 tsp. salt
3/4 c. milk
3 tbsp. melted butter

Beat together eggs and sugar. Sift together baking powder, flour and salt. Alternate flour mixture and milk and add to egg mixture. When combined, beat in the melted butter. Preheat fry pan to 380 degrees. Use 1/4 cup batter for each pancake. Turn pancake when top of pancake is all bubbly. Do not overbake. Pancakes will look like crepes. Serve with butter and sugar or your favorite syrup.
