ITALIAN MEATBALLS WITH LIMA
BEANS
 
1 1/2 c. lg. lima beans
4 c. water
1 stalk celery
1 lg. onion
1 clove garlic
2 1/2 tsp. salt
1 can tomato paste
1 tsp. crumbled herbs
1/2 bay leaf
1/4 tsp. pepper
1 beaten egg
1/2 c. milk
1 c. bread crumbs
1 lb. ground beef & dripping

Rinse lima beans, add water. Soak for several hours or overnight. Chop celery, onion, garlic and add to beans with 1/2 teaspoon salt and cook until tender. Add tomato paste, herbs and bay leaf and pepper. Then mix lightly. Combine egg, milk, crumbs, and remaining salt and blend with beef. Shape beef into balls and brown with small amount of drippings, place ball on beans and cook for an hour in a pan.
