BANANA APPLE BREAD 
3 large ripe bananas
1 cup sugar
1 egg
4 tbsp. (1/2 stick) butter, melted and cooled
1 1/2 cups all purpose flour
1 tsp. salt
1 tsp. baking soda
2 apples, peeled and chopped into small pieces
1/2 cup chopped walnuts

Preheat oven to 325°F. Lightly grease a 9x5-inch loaf pan; set aside.

In a bowl mash bananas; you should have 1 cup. Beat in sugar, then egg and butter. In another bowl, stir together flour, salt and baking soda; add to banana mixture and stir just until all flour is moistened. Add apples and nuts; stir just until well mixed. Pour batter into prepared pan. Sprinkle cinnamon topping evenly over batter.

Bake at 325°F for 55 to 60 minutes.

Cinnamon Topping:

1/4 cup firmly packed brown sugar
1 tbsp. all-purpose flour
1 tbsp. softened butter
2 tsp. ground cinnamon

In a bowl, stir together brown sugar, flour, softened butter and cinnamon.

I made this bread but sadly I had no walnuts and very little butter.

I subbed some butter for "spread" in little packets it worked out fine all melted and made a very moist bread. This turned out great next time ill make sure to have walnuts.

Absolutely delicious and ultra moist! I finally found my favorite basic recipe for using up my tired bananas and I've tried many. I loved this bread and will make it again and again. It was so moist I brought it to share with my friends and their kids who normally don't like apple in breads- and they also loved it! (I tweaked it slightly: used 4 bananas instead of 3; added 4oz. of applesauce and one tsp. vanilla; increased flour to 1-3/4 cup and used whole wheat flour.)

This is just perfect! I would give it 6 stars for the health value. For a healthier low fat-low sugar version ,I made it with Splenda and one tbsp butter. The cake was still moist and delicious. Thank you !
