SANTA FE TOSTADAS 
6 (8 inch) flour tortillas
1 lb. ground turkey breast
1/2 c. chopped onion
1 (16 oz.) pkg. frozen corn with red and green peppers
1 (15 oz.) can tomato sauce
3 to 4 tsp. chili powder
1 1/2 tsp. cumin
1/2 tsp. garlic powder
3 c. shredded lettuce
1 lg. tomato, diced
2 oz. (1/2 c.) shredded fat free Cheddar cheese
Salsa if desired

Heat oven to 375 degrees. Place tortillas on ungreased cookie sheets. Bake at 375 degrees for 7 to 10 minutes or until crisp and lightly browned.

Meanwhile spray large skillet (non stick) with cooking spray. Brown turkey with onion, drain well. Pat out any excess fat. Add corn, tomato sauce, chili powder, cumin and garlic powder, bring to a boil. Reduce heat, simmer 6 to 8 minutes, stirring occasionally.

TO ASSEMBLE: Place baked tortillas on individual serving plates, top with 1/6 of lettuce, spoon 1/6 of meat mixture over lettuce. Top each with tomato and cheese. Serve with salsa and a dollop of fat free sour cream.
