GLAZED CARROTS 
1/2 lb. carrots (2 c.), sliced into 1 1/2" pieces
4 tbsp. butter
2 tsp. flour
1/4 c. orange
1/3 c. brown sugar, firmly packed
1/4 tsp. salt
Pinch of cinnamon
1/4 tsp. vanilla

Steam carrots over low heat until done. Drain. Melt butter, stir in flour. Add remaining ingredients except vanilla. Stir constantly until smooth and slightly thickened. Stir in vanilla. Mix glaze and carrots. Reheat. Makes 2 large servings.
