GLAZED CARROTS 
1/2 lb. carrots (sliced or 1 1/2" strip, about 4 lg.)
4 tbsp. butter
2 tsp. flour
1/4 c. orange juice (I use Tang)
1/3 c. packed brown sugar
1/4 tsp. salt
Pinch of cinnamon
1/2 tsp. vanilla

Steam carrots; drain. Over low heat, melt butter; stir in flour. Add remaining ingredients except vanilla. Stir constantly until smooth and thick. Stir in vanilla. Mix glaze and carrots. Reheat. Enough for 3; can be doubled (use less sugar).
