SWEDISH APPLE COFFEE CAKE 
2 c. flour
1 1/2 c. sugar
2 tsp. cinnamon
2 tsp. baking soda
1 tsp. salt
1/2 c. oil
2 eggs, beaten
1/4 c. brewed coffee
1 1/2 tsp. vanilla
2 1/2 c. sliced peeled apple
1 c. chopped nuts

Mix dry ingredients in a large mixing bowl. Stir in wet ingredients and blend. Stir in apples and nuts. Pour into greased and floured 9 inch tube pan. Bake at 350 degrees for 60 minutes. Cool 10 minutes, remove. Serve warm and cool, sprinkle with confectioners sugar.
