SWEDISH GINGER CAKE 
3 c. brown sugar
3 eggs
1 1/2 c. (35%) cream
1 tsp. baking soda
3 c. flour
1 tsp. cardamom
1 tsp. cinnamon
1 tsp. ginger
1 tsp. cloves
1 c. melted butter

Beat brown sugar and eggs with electric mixer for 10-15 minutes. Add remaining ingredients in order as listed above. Butter an angel food cake pan and sprinkle with crushed toast crumbs. Bake 60 minutes at 350 degrees.

Do not frost. Sprinkle with powdered sugar. Slice thin to serve as alternative to pie at Christmas or Thanksgiving.
