BAKED CHICKEN BREASTS IN SALSA 
6 chicken breasts
1 med. onion
1 whole green pepper
1 whole red pepper
1 zucchini
1 yellow squash
2 c. salsa or picante sauce

1. Julienne (long thin strips) onion, green bell pepper and red bell pepper.

2. Slice thin zucchini and yellow squash.

3. Heat skillet with a little oil and sear chicken breasts until lightly browned. Remove to a baking pan and add the vegetables. Then pour salsa over all. Cover pan with foil and bake at 350 degrees for 1 hour. To serve, place a breast on the plate and spoon some vegetables and sauce over. (Suggestion: Serve with rice.) Yields: 4 servings.
