OVERNIGHT MINT MERINGUES 
2 lg. egg whites, room temperature
3/4 c. sugar
1/2 tsp. peppermint extract
6 oz. chocolate chips
1/4 tsp. red or green food coloring

Preheat oven to 350 degrees. Beat whites until foamy. Gradually add sugar, beating until stiff, but not dry. Fold in peppermint extract, chocolate chips, and coloring. Spoon batter by rounded teaspoonfuls onto greased cookie sheet.

Before putting cookies in oven, turn if OFF. Don't peek. Leave in oven overnight.
