BRANDIED FRUIT 
1 can pitted tart cherries, drained well
1 c. sugar (granulated)
1 can pineapple chunks, well drained
1 c. sugar (granulated)
1 can firm peaches, cut in pieces, well drained
1 c. sugar (granulated)

Use a large crock bowl; place cherries and 1 cup sugar. Stir well. Cover; let stand at room temperature 2 weeks. Stir every other day. At end of 2 weeks, add pineapple and 1 cup sugar. Stir every other day as before. In 2 weeks, add peaches and 1 cup sugar. Repeat as before. Other firm fruits may be added every 2 weeks with 1 cup sugar. Do not use soft fruits such as bananas. This takes 6 weeks and makes a large batch. Makes nice Xmas gifts. Use on ice cream, custard, cake, etc. If you want at end of 6 weeks, put into sterilized jars and seal. (Keep for starter - keep 1 cup of fruit mixture; add 1 can fruit, 1 cup sugar.)
