SWEET POTATO CAKE 
2 sticks butter
2 c. sugar
4 eggs
2 1/2 c. cooked, mashed sweet potatoes
1 tsp. cinnamon
1/2 tsp. nutmeg
3 c. flour
1 tsp. vanilla
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1/2 c. walnuts
1/2 c. coconut

Cream sugar and butter until fluffy. Add eggs one at a time, beating well, add mashed potatoes, vanilla and other spices. Sift flour with soda, salt and baking powder. Add other ingredients and blend well. Fold in chopped nuts and coconut. Pour in large greased and floured tube pan. Bake at 325 to 350 degrees. Cool in pan 10 minutes. You may also use pumpkin in place of sweet potatoes.
