SWEET POTATO CAKE 
2/3 c. butter
2 c. sugar
1/2 tsp. salt
2 c. all-purpose flour
1 tsp. vanilla
1 tsp. baking soda
2 tbsp. cocoa
1 tsp. each: allspice, cinnamon, cloves, nutmeg
4 eggs, separated
1 c. mashed, canned sweet potatoes
1 1/2 c. raisins (optional)
2 c. chopped nuts
1 c. buttermilk

Preheat oven to 325 degrees.

Cream butter and sugar. Sift dry ingredients together and add to creamed mixture. Beat egg yolks and add with sweet potatoes.

Combine raisins and nuts. Add to potato mixture. Add buttermilk. Beat egg whites stiff and fold in with vanilla.

Pour into lightly greased and floured tube pan. Bake at 325 degrees about 1 hour. Reduce temperature to 300 degrees and bake 45 minutes longer.
