CHEESE MINTS 
1 (8 oz.) pkg. cream cheese
6-8 drops of peppermint oil (do not use extract)
2 lb. powdered sugar
Food color, if desired

Blend all ingredients thoroughly. This should be about the consistency of modeling clay. These mints can be rolled on granulated sugar and cut with tiny cutters. It is ideal to use with rubber candy molds. Simply shape a small ball of the mint mixture and press into granulated sugar. Press the sugared side into the mold. Drop out onto waxed paper and allow to dry. By the way, if you really want to get fancy, leave the mint mixture white and brush a little tint of color on using food color with a little painting brush.
