CHICKEN CORDON BLEU 
3-4 boneless breasts of chicken
3 oz. shaved ham (Virginia baked is good)
3-4 slices Swiss cheese
6 tbsp. all purpose flour
1/2 tsp. salt
1/4 tsp. pepper
1 1/2 c. bread crumbs
4 eggs
2 tbsp. water
Toothpicks

1. Cut pocket halfway into chicken breasts.

2. Flatten breasts to 1/4" by beating with back of large spoon.

3. For each breast, take one slice of ham and one slice of cheese. Wrap ham around cheese and place inside breast pocket. Pull chicken together and seal with toothpicks.

4. Refrigerate 15 minutes. (Can skip #4 if needed.)

5. Combine flour, salt and pepper.

6. Beat egg and water in shallow bowl.

7. Coat breasts with flour, dip in egg, coat with bread crumbs.

8. Refrigerate 10 minutes to set.

9. Cook chicken in single layer in 1/4" of hot oil for 10 minutes until golden, turning once.

10. Transfer to baking dish. Bake in 350 degree oven for 10 minutes.
