ZUCCHINI PANCAKES 
3 med. zucchini
3 tbsp. flour
2 tbsp. Parmesan cheese, grated
1/4 tsp. parsley, chopped
1 tsp. salt
2 eggs, unbeaten
1 tbsp. sherry
1 tsp. chives, chopped
Pinch of garlic powder
1/8 tsp. pepper

Wash, dry but do not peel zucchini. On a coarse grater grate zucchini into mixing bowl. Stir in other ingredients and seasonings. If mixture appears too liquid, add 1 tablespoon flour.

Drop batter by spoonfuls on an oiled, moderately hot griddle or skillet and cook until brown on both sides. Serve hot or cold.
