ZUCCHINI PANCAKES 
This recipe comes from a dear friend who loves to cook. It is not lo-cal but oh, so worth it!

2 lg. zucchini, grated
2 eggs
1/2 c. flour
1 tsp. baking powder
Garlic salt
1/4 c. Parmesan cheese

Mix ingredients. Fry spoonfuls on hot griddle for 6 to 7 minutes on each side. May be refrigerated and reheated or eaten cold the next day.
