JAG (Cape Verdean Rice With Beans) | |
1 sm. onion (1/2 may be sufficient) 4-6 tbsp. oil or 1/2 stick butter 1 c. of our favorite cooked or frozen beans or peas (lima beans, kidney beans, black eye peas, etc.) 2 c. water 1 c. rice 1 tsp. salt 1/2 tsp. paprika (for color) Saute the onion in oil or butter; mix in the beans. Add the salt and paprika. Stir them and add the water. Cover the pan and let water boil. Add the rice and cook over low heat for about 20-30 minutes. May be served with any kind of meat. Serves 3-4. |
