LEMON BLUEBERRY MUFFINS 
2 eggs
1/2 c. melted butter (measure melted)
1/2 c. sugar
8 oz. plain or lemon yogurt
2 c. flour
1 tsp. baking powder
1/2 tsp. baking soda
1 tsp. grated lemon rind
1 c. frozen or fresh blueberries

Mix together eggs, sugar and butter. Add 8 ounce plain or lemon yogurt. Mix dry ingredients together and add to batter. Add grated lemon rind and blueberries. Bake at 375 degrees for 25 minutes. Makes 12 muffins.
