GREEN TOMATO PICKLES 
3 qts. sliced green tomatoes
3 med. thinly sliced onions
1/4 c. salt
3/4 qt. vinegar
3 c. sugar
1 tbsp. celery seeds
1 tbsp. mustard seeds

Add salt, tomatoes, onions in a pan covered with ice. Let stand 1 hour. Combine sugar, celery and mustard seed and vinegar in a large saucepan.

Bring to a boil, drain tomatoes and onions. Rinse in cold water. Add to mixture and simmer until hot. Do not boil. Pack in hot jars and seal. Makes about 5 pints.
