PEACH BAVARIAN CREAM 
1 1/2 c. chopped fresh or frozen peaches
2 tbsp. lemon juice
1/4 tsp. salt
2/3 c. sugar
1 1/2 tbsp. unflavored gelatin
1/2 c. water
1 tsp. vanilla
1 c. heavy cream, whipped
1/2 tsp. almond extract

Combine peaches, lemon juice, salt and pepper. Let stand 1 hour. Soften gelatin in cold water, then dissolve over low heat. Combine with peach mixture and chill. When mixture begins to thicken, fold in whipped cream, vanilla and almond extract. Place in mold, chill until firm.
