HOT FUDGE PUDDING CAKE | |
1 c. all purpose flour 3/4 c. granulated sugar 2 tbsp. cocoa 2 tsp. baking powder 1/4 tsp. salt 1/2 c. milk 2 tbsp. vegetable oil 1 tsp. vanilla extract 3/4 to 1 c. brown sugar 1/4 c. cocoa 1 3/4 c. very hot water 1. In mixing bowl, stir flour, sugar, two tablespoons cocoa, baking powder and salt. 2. Add milk, oil and vanilla, mixing with a fork until smooth. 3. Stir in chopped nuts. 4. Spread evenly in buttered, 9 inch square pan. 5. Sprinkle brown sugar and quarter cup cocoa over batter. 6. Pour hot water over top. Do not stir (for thicker fudge sauce, reduce water to 1 1/2 cup). Bake for 40 to 45 minutes at 350 degrees. Serve warm. During baking, cake rises to top and sauce settles on bottom. To serve, cut into squares and use spatula to invert each square on plate and spoon sauce over cake. Great with ice cream. |
