JORDAN MARSH MUFFINS | |
1 stick butter 2 c. flour 1 c. sugar 1/2 c. milk 2 eggs 1 tsp. vanilla 1/2 tsp. salt 2 tsp. baking powder 2 1/4 c. blueberries At low speed, cream butter and sugar until fluffy. Add eggs, one at a time. Add dry ingredients alternately with milk and vanilla. Mash 1/2 cup of berries and stir in. Add berries which have been dusted with flour. Grease and flour tins well all over and top 3/4 full of batter. Paper liners can be used; fill almost to the top. Sprinkle top with sugar. Bake at 375 degrees for 25 to 30 minutes. Cool in pan 30 minutes, then remove. |
