ANGEL HAIR PASTA WITH TOMATO
SALSA
 
8 firm tomatoes
1/2 c. chopped sweet red pepper
1/2 c. chopped sweet yellow pepper
1/2 c. finely chopped onion
3 cloves garlic, thinly sliced
8 leaves of fresh basil
1/2 c. olive oil
Salt and pepper
1/2 lb. angel hair pasta
Grated Parmesan cheese

Combine tomatoes, peppers, onion, garlic, basil and olive oil. Season with salt and pepper. Cook pasta in boiling salted water "al dente". Drain, put in bowl top with vegetable sauce. Pass cheese and crushed red pepper flakes.
