HOT TAMALE PIE | |
2 1/4 c. evaporated milk 1/2 c. yellow cornmeal 1 lb. ground beef 1/2 tsp. baking powder 2 tsp. chili powder 1 tbsp. onion (chopped) 1 1/2 c. water 3/4 tsp. salt 1/2 c. soft bread crumbs 1/4 tsp. pepper 2 tsp. salt Preheat oven to 375 degrees F. Heat 1 1/2 cups of milk and the water just to boiling. Stir in meal and 3/4 teaspoon salt, slowly so milk does not stop boiling. Cook slowly for 5 minutes, stirring frequently. Put beef, onions, 2 teaspoons salt, chili powder, pepper, bread crumbs and baking powder in mixing bowl. Mix thoroughly with 3/4 cup evaporated milk. Press in bottom of greased 2 1/2 quart casserole dish, leaving space around edges. Pour cornmeal mixture over top, letting it run down into space left by cornmeal dough. Bake at 375 degrees F. for 1 hour or until brown. Serve over shredded lettuce. |
