TURKEY CROQUETTES 
2 c. diced cooked turkey
Salt to taste
1/8 tsp. paprika
Pinch of celery salt
1 tbsp. minced parsley
1 tsp. lemon juice
1/4 tsp. grated onion
1 c. thick white sauce (3 tbsp. butter and 4 tbsp. flour)
Fine cracker crumbs or crushed corn flakes
1 beaten egg
1 tbsp. water

Combine turkey, seasonings, parsley, lemon juice, onion and white sauce; mix well. Spread on plate; chill thoroughly. Shape as desired. (I make mine in little logs). Dip into crumbs, then into egg mixed with water, and again into crumbs. Fry in deep fat (365 degrees) until brown, about 4 minutes. Drain on absorbent paper. Makes 12 croquettes.
