POTATO CROQUETTES 
2 tbsp. milk
1 1/2 tsp. salt
Dash of black pepper
1 tsp. onion, minced
2 tbsp. butter, melted
2 egg yolks, beaten
4 c. mashed potatoes
Fine dry bread crumbs
1 whole egg
1 tbsp. water

Combine mashed potatoes with milk, salt, pepper, onions, butter and egg yolks. Mix well. Chill and form into balls about 2 inches in diameter. Roll in crumbs, then in whole egg and water which have been beaten together. Roll again in crumbs. Fry in deep fat until golden brown. Yield: 16 croquettes.
