SHELLS AND SPINACH BAKE 
3 c. (8 oz.) medium shells, uncooked
32 oz. jar spaghetti sauce
1 lb. ricotta or cottage cheese
8 oz. shredded mozzarella cheese
1 c. chopped fresh spinach
1/4 c. grated Parmesan cheese
3 eggs
1/2 tsp. salt
1/4 tsp. pepper

Cook shells according to package directions; drain. Toss with 2 1/2 cups sauce. Meanwhile, in medium bowl, combine remaining ingredients. In 2 1/2 quart casserole, layer 1/2 shell mixture; spread cheese filling over shells. Cover with remaining shells; top with remaining 1 cup sauce. Sprinkle with additional Parmesan cheese. Cover and bake at 350 degrees for 35 to 40 minutes or until hot and bubbly. Makes 4 to 6 servings.
